Sweet's DIY Syrup Kit Instructions

MAKE ORGANIC ELDERBERRY SYRUP RIGHT AT HOME

With a Sweet's DIY Kit, you can create customized organic elderberry syrup with the sweetener your family likes best. 

Directions follow for STOVETOP or INSTANT POT preparation follow, along with helpful hints for storage!

STOVETOP PREPARATION

WHAT YOU'LL NEED

  • Large pot
  • Metal spoon
  • Large bowl (metal or glass)
  • Fine mesh strainer or a colander (pasta strainer) lined with cheesecloth or an old, clean dishtowel
  • Cooking thermometer (optional)
  • Funnel
  • 5 cups water
  • Clean lidded glass container or glass jars
  • 1¼ cup honey OR sweeten to taste with your favorite alternative sweetener (agave, monkfruit, maple syrup, etc.) - click HERE for a handy conversion calculator

INSTRUCTIONS

  1. Discard the tiny desiccant package from your kit, then pour kit contents and water in a large pot.
  2. Over medium-high heat, bring mixture to a gentle boil for 30 seconds.
  3. Immediately reduce heat to low and let mixture simmer for 20-25 minutes, or until liquid has reduced by one-third.
  4. Carefully pour liquid through the strainer/cloth into a bowl, then press on the mixture with the back of a metal spoon to extract more. Discard or compost what's left in your strainer.
  5. Add sweetener, stirring until completely blended. (If using raw honey, let syrup cool below 100°F first. Measure with a cooking thermometer or simply wait until syrup feels warm, but not hot.  If using another sweetener, follow package directions for substitution guidelines.)
  6. Funnel syrup into container, apply lid, and refrigerate immediately. If freezing your syrup, allow 1" headspace for expansion and do not apply lid until completely frozen.

INSTANT POT PREPARATION

WHAT YOU'LL NEED

  • Instant Pot (trivet insert removed)
  • Metal spoon
  • Large metal or glass bowl
  • Fine mesh strainer or a colander (pasta strainer) lined with cheesecloth or old, clean dishtowel
  • Cooking thermometer (optional)
  • Funnel
  • 5 cups water
  • Clean lidded glass container or glass jars
  • 1¼ cup honey OR sweeten to taste with your favorite alternative sweetener (agave, monkfruit, maple syrup, etc.) - click HERE for a handy conversion calculator

INSTRUCTIONS

  1. Remove the tiny desiccant packet from the kit.
  2. Pour kit ingredients and 5 cups of water into your Instant Pot.
  3. Set to Manual and select high pressure for 7 minutes.
  4. Vent completely, then strain Syrup through a fine mesh sieve or cheesecloth-lined colander into a glass or metal container where you can let the syrup cool to 100 degrees or below.  (NOTE: That temp is only important if you're adding raw honey.  Syrup must cool below 100 degrees if you want your live honey enzymes to survive.  If using an alternative sweetener, you may add it while the syrup is hot.)
  5. Once sweetened, pour finished Syrup into glass containers and refrigerate.
  6. Syrup may also be frozen in ice cube trays.  

USAGE AND STORAGE TIPS

Adults and big kids should use 1 Tbsp daily for general wellness.  Use 1 tsp daily for little kids over 12 months.  If needed, syrup may be used every 3 hours for respiratory infection, colds, flu, and seasonal allergy symptom care.

Babies under 12 months should not consume raw honey.  Leave your syrup unsweetened for them, use maple syrup or agave, or blend with a little fruit puree.  Some OB/GYNs and midwives prefer that moms avoid raw honey during pregnancy.  Please check with your provider.

Do not consume raw elderberries. Store unopened kit in a cool dry area for maximum freshness.

Refrigerate finished product and use it within 3 months. Freeze syrup for longer storage.  One frozen syrup cube = approximately one dose.  These are excellent in tea and smoothies, and they turn a glass of lemonade into something special!
